Lavender Lemonade Simple Syrup

  • 2 heaping tbsp roughly chopped fresh lavender flowers, leaves, and stalks (or 1 ½ heaping tbsp dried)
  • Zest from ½ organic lemon, cut into thin strips or grated
  • ¼ to ½ cup local raw honey, depending on desired sweetness
  • ½ cup water

Add lavender and lemon peel to a small saucepan. Add honey and ½ cup water and bring just to a simmer until you have dissolved the honey. Do not boil. Turn the heat off, put on the lid, and let this mixture steep for about an hour or until cooled completely. Then strain, squeezing the herbs and lemon so that all the liquid is released from the pulp. This juice is your simple syrup for your recipe.

Stress-Busting Lavender Lemonade Recipe

  • lavender lemonade simple syrup (above)
  • 6-8 cups cold water
  • ½ cup fresh squeezed lemon juice
  • 6- 8 Fresh lavender stocks (for garnish)

Add the strained simple syrup to 6-8 cups cold water and lemon juice and give it a good stir to make the lemonade. Alternatively, try using sparkling water for a bubbly lemonade version. Garnish with a stalk of fresh lavender and serve over ice.
